Ingredients :

  1. Rice – 1 kg
  2. Mutton – 1 kg
  3. Cardamom – 10 gms
  4. Cinnamon – 10 gms
  5. Cumminseed – 10 gms
  6. Cloves – 10 gms
  7. Ginger – 40 gms
  8. Garlic – 20 gms
  9. Green Chilies – 100 gms
  10. Fried Onion – 50 gms
  11. Coriander Leaves – 1 bunch
  12. Mint leaves – 1 bunch
  13. Lemon - 2
  14. Curd – ¼ cup
  15. Ghee – 250 gms

Method :

  • Wash mutton and put it in a vessel.
  • Grind green chilies, ginger, garlic, spices, fried onion, and mix them all, then add this mixture to the meat.
  • Then add curd to it, mix thoroughly. Keep aside for half an hour.
  • Boil 2 litres of water.
  • When water comes to a boil add the rice.
  • Take out the semi-cooked rice and spread it on the meat and spices mixture as a layer.
  • Take some more rice and spread as second layer. Finally, spread the fully cooked rice.

  • Prepare a mixture of one cup of boiled water and 1/4 kg ghee and spill it on the rice.
  • Now cover and seal the edges with dough. Put the vessel on the stove, cook for 15 minutes on medium flame.
  • Let it cool a bit for 10-15 minutes and take off the seal.
  • Hyderabadi mutton biryani is ready to serve.
