Green Goddess And Garlic Soup

Ingredients :

  1. Spinach – 1 bunch
  2. Cabbage leaves – 4
  3. Iceberg lettuce – ½ (optional)
  4. Garlic – 6 cloves
  5. Chicken /Vegetable Stock – 1.5 litre
  6. Parsley – 6 sprigs
  7. Bay leaf – 1
  8. Thyme – 1 sprig
  9. Brown rice – 100 gms
  10. Wholegrain Bread, to serve with

Method:

  • Wash spinach and trim stalks if necessary. Cut thick core from cabbage and discard.
  • Roughly chop cabbage and lettuce. Peel and crush garlic.
  • Put the stock in a large saucepan.
  • Add vegetables, garlic, bay leaf, thyme and brown rice.
  • Cover and cook for 20 minutes, or until rice is cooked.
  • Blend or process.
  • Serve with croutons of toasted whole grain bread.
